Chocolate Peppermint Drop Cookies

During this time of year I think we are all running on a fun combination of too little sleep, too much caffeine, and all sorts of magical sugary creations.

Right now I can’t stop thinking about Chocolate Peppermint Drop Cookies! I know that the last thing you probably want right now is another dessert recipe, however I feel like everyone is going to be Christmas baking this weekend and you might need another idea.

This cookie recipe is a nod to one of my favorite combinations; chocolate and peppermint. Add this recipe to your baking list and I Hope your holiday season is Merry and Bright!

Chocolate “Peppermint Drop” Cookies

2 3/4 cups of flour
1/4 cup cocoa powder
1 tsp baking powder
Pinch of Salt
1 1/4 c sugar
1 c shortening
3 Eggs
1 tsp vanilla

white chocolate bark or candy melts
crushed peppermint

Preheat oven to 400 degrees

Mix together flour, cocoa powder, baking powder, and salt- set aside.  In a mixing bowl, cream together sugar, shortening, eggs, and vanilla.  Roll dough into 3 balls, wrap in wax paper, and refrigerate for 1-2 hours

Pinch of small balls of dough to be rolled out thin, on a floured surface, with a rolling pin. Cut out round shapes with your cookie cutters and bake for 8-10 minutes on an ungreased cookie sheet depending on your dough thickness. Allow to cool slightly on the baking sheet and then remove to a wire rack.

When cookies are fully cooled melt the white chocolate and place a circle of it on the cookie. Sprinkle with crushed candy canes before the chocolate sets. Allow to fully dry and then package up!
