Ingredients

  • 8 oz elbow macaroni
  • 2 cups cheddar cheese, shredded
  • 2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups kale or spinach, chopped
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring plenty of water to boil. Add a pinch of salt to the boiling water for flavor.
  3. Add the elbow macaroni to the boiling water and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
  4. While the pasta is boiling, in a medium saucepan over medium heat, melt the butter.
  5. Once the butter is melted, add the flour and whisk constantly for 1-2 minutes to form a roux. The roux should be smooth and begin to bubble.
  6. Gradually add the milk to the roux, whisking continuously to prevent lumps. Cook for about 5 minutes until the mixture thickens.
  7. Remove the saucepan from the heat, and stir in the shredded cheddar cheese until completely melted. If the cheese isn’t melting smoothly, return the pan to low heat and stir.
  8. Season your sauce with salt and black pepper, adjusting to taste.
  9. Drain the cooked macaroni and transfer it back to the large pot. Add the chopped greens to the macaroni.
