  1. Brush both sides of the sourdough bread with 1-2 tbsps. of olive oil.
  2. In a griddle pan, over medium heat add 1 tbsp. of olive oil.
  3. Toast the sourdough bread, both sides, until griddle lines are clearly visible.
  4. Grease a baking tray with 1 tbsp. of oil and add the toasted bread.
  5. Top the bread with cherry tomato halves, bocconcini cheese, chopped basil, and season with salt and black peppercorns.
  6. Bake at 356 Degrees Fahrenheit for 5-10 minutes.
  7. Serve while hot.
